During his actual freshman year, Watson redshirted. He has nine receptions for 165 yards as a redshirt freshman, helping the Bison to the FCS title. Watson was voted second-team All-Missouri Valley Football Conference as a redshirt sophomore after catching 34 catches for 732 yards and six touchdowns (MVFC).
Watson’s redshirt junior season, which was cut short and played in early 2021 due to the COVID-19 pandemic, saw him earn first-team All-MVFC and first-team All-American(AP) honours as an All-Purpose player with 19 receptions for 442 yards and one touchdown.
